My Mantra for 2012

Much has transpired in the last few months in Happy Valley, both good and bad. And isn't that pretty much how life goes? One of my goals for this year is to simply look ahead and move forward. Sounds pretty simple, right? If we have our heads turned back so that we are constantly focusing on what has already transpired, it makes it almost impossible to move forward without eventually hitting a wall.

Saturday, February 4 - Fun In The Snow at Black Mo

Enjoy a fun-filled day of activities in the snow! Learn new skills, such as ice skating and snowshoeing. Take a walk to look for winter signs of wildlife, then take a cross-country ski trip. Try to make a snow sculpture and enjoy sled riding. Make a sled out of boxes and see how it works. Let's see if you can play ice mini golf and ice bowling. Curling will also be available for you to try. Food vendors will be available and the environmental learning center will be open for you to warm up. Most events will take place at Boat Launch #1 or near the Environmental Learning Center.

Friday, February 10 - Space Explorers Program

Do you ever gaze into the night sky and wonder about the mysteries of the universe? What is our place within the solar system and the Milky Way galaxy? What planets exist beyond Earth? Families and other folks are welcome to head out to Shaver's Creek for an evening of space exploration. Astronomer Jason Young, a Penn State graduate student and an expert on the night sky, will be at Shaver's Creek that evening, with his telescope. Explore the stars, make your own comet, and learn about the moon and the sun. Pack yourself in winter layers-- for stargazing and working outside! If the night is cloudy, the fun continues inside with the indoor planetarium. Hope to see you there!

Kick off the State College Spikes 2012 season! Anyone who knows me, knows that I am not fond of baking. I am one of those..."a little of this, and a little of that" types of gals. I do not like measuring and I REALLY do not like cleaning up the mess I make when I bake. Friends and family would say that I am a pretty good cook, but as soon as it calls for measuring, FORGET IT! UNTIL ... these muffins! Wait until you smell them baking! I can tell you that these are worth the hassle ...

Right after the holidays there is a sort of let down. The doldroms set in. The toys are BOORRING and if you hear the theme song to the Wonder Pets one more time, you may lose your mind. What a great time to gather the kiddos to make the birdies some yummy (and adorable) treats.


What you will need to make around two 2.5 - 3 inch biscuits:
